Chicken Casserole

1 lb Chicken Breast–Cleaned & cubed  (1 inch)
2 TBS Canola Oil
1 cup Flour
1/2 Bag Frozen Potatoes
1 Can Cream of Mushroom Soup
1 Can Cream of Chicken Soup
12 oz Sour Cream
3/4 cup Shredded Cheddar Cheese
2-4oz Cans HATCH CHOPPED GREEN CHILI’S
2-3 Scoops SIMPLE SALSA HATCH SALSA SEASONING

In large bowl, mix soups, 1 1/2 scoops Hatch salsa Seasoning, Sour Cream, Chopped Hatch Chili’s together well–set aside.

Put 1  scoop Hatch seasoning into Flour, Mix well.  Dredge Chicken and cook on medium heat for 2-3 minutes per side until slightly brown.

Pre-Heat oven to 350.  In a 9 x 12 Oven safe dish, coat with oil, place Potatoes on bottom and sprinkle with 1/2 scoop Hatch Salsa Seasoning, Place a layer of the soup mixture on top of potatoes, then place chicken.  Pour remaining soup mixture on top.    Spread cheese evenly on top of mixture and place in oven for 25-30minutes.

Remove from oven and let rest 10-15 minutes–ENJOY!

This is absolutely DELIGHTFUL!!!!
