Creamy Garlic Chicken/Angel Hair Pasta
CREAMY GARLIC CHICKEN
What you will need:
1lb Chicken Strips–washed, (Tendon removed) cut into 1 inch pieces
1/2 pint Buttermilk
4-5 oz EZ MIXES GARLIC LEMON DILL SEASONING
1/3 cup Olive Oil
1/3 cup White Wine
3 TBS Butter
1 cup Flour
1 Medium Shallot–Minced
6-7 Cloves Garlic–Minced
2-3 Leaves Fresh Basil — (Chopped)
1/4 cup Lemon Juice (Fresh is best)
3/4 pint Heavy Cream
1/4 cup Capers
1/2 Cup Baby Bella’s — Sliced
1/3 Cup Baby Spinach –(Optional)
Angel Hair Pasta (enough for 2-3 people)
PREP
In gallon baggie, place Buttermilk, 1-1 1/2oz Garlic Lemon Dill Seasoning, and cleaned chicken. Mix well and place in fridge for 3-4 hours-(No Longer)
DIRECTIONS:
In large skillet place olive oil and heat on Medium Heat. In thee meantime, remove chicken from butter milk and toss into flour mixture adding 2 oz Garlic Lemon Dill seasoning, coating well. Remove and shake off excess flour. Place in skillet and cook until light golden brown. Remove and place on paper towel to drain and cover.
Next, place Shallots, Onion, and Garlic in skillet and cook on Low-Med heat for about 5 minutes, pour in Lemon juice, remaining Garlic Lemon Dill Seasoning, and cook for 2-3 minutes. Add White Wine, to de-glaze pan and cook until reduced by half.
In the meantime, cook Angel Hair Pasta according to directions.
Add Mushrooms and cook about 2-3 minutes, then add Heavy Cream. Once good and hot add Mushrooms and cook until they are softening. Add Basil, Baby Spinach and cook for 1-2 minutes. Add chicken back in and Capers, and cook until everything is hot and sauce has thickened, Usually 3-4 minutes.
Plate Angel Hair Pasta, top with creamy Garlic Chicken, top with cheese of choice if desired——–ENJOY!!!!!! THIS IS MY FAVORITE DISH!
